Asian Baked Salmon

Asian Baked Salmon serves 2

2 fresh filets of salmon

2 Tbsp olive oil

1.5 Tbsp soy sauce

1 Tbsp sesame oil

1 Tbsp pickled ginger 

1 diced green onion

Preheat oven to 400°. In a small bowl combine the two oils, soy sauce, and pickled ginger. Dip each filet into the mixture to coat and lay in a baking dish. Pour the remaining liquid over the salmon and top with diced green onion.

Bake for 20 minutes or until fish is opaque. 


Logan's Notes:

-The pickled ginger in the marinade can be substituted with shaved fresh ginger, or alternatively ground ginger from your spice rack. Use what you have!

-Optimal salmon is cooked to a medium rare point; the fish is opaque and flaky however still moist and delicate in the center. It takes a few turns to figure out how to cook to this sweet spot with your particular oven. 

-This would also be fantastic grilled.

-I served my salmon alongside a sweet potato and asparagus, but the options are endless.
